Confession One:

I am not a food photographer but I thought I would pretend to be one last night as I made dinner.  Dan Bahry of Akron-Canton Bootcamp challenged us to make Quinoa {pronounced Keen-wa} this month.  I actually have been a fan of quinoa for a while but don’t tend to make it as much as I should.  It’s great for you with tons of protein so subbing it for rice adds a boost of nutrition.  (And, it’s also only slightly more complicated than rice so I have no real excuse.)

Confession Two:

I am not a good recipe-follower.  I like to cook as I go… so very few dishes turn out exactly the same way twice.  But overall, I do enjoy cooking (cleaning dishes, not so much) and trying new foods.

Confession Three:

I don’t cook as much as I should.  I have great intentions but with the business, two kids’ activities, and life I find myself out more than I’d like to be.  I’m making an effort to change that and may just share a recipe on here now and again.

Fajita Steak Quinoa & Vegetables (Totally made up the name…what do you think?)

1 cup Quinoa

3 cups water

pinch of sea salt

1 1/2 T. olive oil

1 T coconut oil

1 onion

2 red (green or yellow) peppers

2 garlic cloves

1 container of mushrooms (How many is that?  2 cups?  1 1/2?)

1 lb. thinly sliced beef round steaks

salt and pepper to taste

If you’ve never cooked quinoa before, no worries.  I promise, if you can boil water, you can make quinoa.  First rinse and soak the seeds.  If you browse around the internet, there are some different methods for this.  Basically, I just fill up my colander (and clean cheese cloth) with quinoa, place it in a bowl of water, and swish them around with my hands.  A fine mesh strainer would work much better but I don’t have one.  I repeat this two or three times.  They say some quinoa is pre washed but I figure it only takes a minute just to be safe.

Place quinoa and water in pan with a pinch of sea salt and bring to a boil.  Reduce heat, cover, and simmer for about 20 minutes.

Chop up all your veggies.  Mince your garlic. Leave the peppers and onions in little rings if you like.  (It’s kind of pretty.)

Add a little coconut oil to the pan.  Brown the meat on each side.  This takes only a minute or so.  Remove meat, add the remaining coconut oil, and sauté the onions and peppers.  After 2-3 minutes add the mushrooms.  Wait another minute and add the meat back in along with the garlic.  (Garlic has some amazing properties I am learning…but the more you cook it, the more it looses strength so I’ve been trying to add it last.)  Add the salt and pepper.

Your quinoa should be about done at this point.  If there is water remaining, carefully drain it out.  Stir in the olive oil and a little salt and pepper.  You can add additional spices here as well.

Spoon your steak and veggies on top and enjoy.  This recipe got three thumbs up and one thumb down.  The seven year old was the thumbs down if that tells you anything.  It was a quick and easy dinner that I’ll definitely make again.
